This lovely cheese is from Holland, and Roomano is similar to an aged gouda cheese, but is technically from the cheese family 'Proosdy'. Proosdy has less butterfat than the required 48% for Gouda (this one has 45%). This cheese is very dense in flavor and is crumbly in mouth-feel. Made of pasteurized cow's milk and aged up to 4 years, Roomano has an intense flavor of sweet-salty butterscotch. The cheese is filled with lovely crystals - calcium lactate crystals that form during aging - this cheese has an awesome crunch.
