Mortadella is an Italian cold cut that deserves a spot on your shopping list. Not only is mortadella a welcome addition to charcuterie board, it's delicious in sandwiches, stuffed into pasta, and more. Mortadella is a large Italian sausage or luncheon meat made of finely hashed or ground heat-cured pork, which incorporates at least 15% small cubes of pork fat. The extra fat content gives mortadella its signature white "polka dot" look. It is traditionally flavored with black pepper grains, but modern versions can also contain pistachios or, more rarely, myrtle berries. The primary flavor in mortadella is rich, fatty pork, with accents of spice and pistachio that are mellowed when cooked. Mortadella has a silky mouthfeel and hearty texture, not unlike bologna.
